In collaboration with chef Alan Hughes and chef Casals, we did a special event at the MDCI for a group of students. The theme: Argentinean traditional dishes. Alan prepared in front of the group, how to cook skirt “empanadas”, rose meat tenderized with milk, and “Carbonada” stew. I gave my brief about the three cuts chosen and then we had a Q&A with the students. Chef Casals wrapped the class by explaining how to deconstruct a classic dish and experiment with your own creativity to add a new dimension. I want to thank to chef Casals and Chef Alan for inviting me to celebrate and to be part of this Argentinean cuisine event at the institute.
